Toni

I'm going to miss Vince's mom when we move. I'll miss my own parents as well, but thats a given. His mom and I have so many wonderful conversations, sometimes about not much at all and others are very meaningful. We just got done chit chatting for about an hour and a half. We talked about everything from drunk driving, my livestock I used to raised, her dancing as a child, us both being in baton when we were kids, my old horse, religion, to movies. I loved our conversation! It just kept going and we would be talking about one thing and that would spark something new and then we would ramble on about that and hop to a new subject... but yet it all just flowed. She will truely be someone I miss, but I know she is happy for us both.

Welcome home Vinny

Vince was released yeasterday from the hospital. I guess on Monday the doctor said if he is able to drink by Tuesday he can go home. I told him that he now has something in common with Paris Hilton... they were both released yesterday, hehe, I know I'm weird. Anyways he doing a whole lot better then I thought he would be. He is able to eat (soft foods), drink, and talk pretty well. If he talks too long it starts to hurt but he is doing much better then I though he would, hardly any whining.

Next big adventure... MOVING!!

bye bye tonsils and uvula

Vince goes into suregery in about a half hour. I'm at work, since the move is near and we can use all the money we can get, but wish I was in the waiting room to see him once he was out. My dad made my day today, he said he would give me the extra gas money so I can go out to Loma Linda and see him when I get off work, since he knows a lot of my money is going towards the move. Vince is having his tonsils and uvula removed along with tissue from the top back area of his mouth removed. All these surgeries should solve his sleep apnea, he hardly stops breathing at night anymore just from the surgery they did on his nasal passages. So this final surgery should stop any remaning blockage of air while he sleeps... yay no more sleep machine! It will be nice to see him get a good nights sleep again soon. Originally the doctors said it was just being caused by his weight, so Vince lost about 30 pounds, but the apnea got progressivly worse. The dostors actually did more investigating, rather then just blaming his weight and realived his throat and nose were way messed up. I remember the nights when his sleep apnea was really really bad, I would wake up at all times through out the night just to check on him to see if he was breathing. My biggest fear was that he had stoped completely, thankfully that never happened and he is able to get this problem fixed. Vince has to stay in the hospital for 3 days so the next few nights will be kinda odd not having him next to me... that and I have to watch Hell's Kitchen tonight by myself :(

moving trucks

So today Vince and I booked our moving truck. A couple days ago I found a company who works along side ups freight named move america. How it works is they drop off a 28 foot trailer and you load it, once you are done loading it you call them and they pick it up. Then that same day that truck goes to a local ups freight hub and fills the rest of the trailer with cargo headed to the same area. Our stuff is completely walled off so there is no risk of our belongings getting shipped somewhere it wasnt supposed, and either that same day or the next day the friedht truck heads to your new locatin. You then fly or drive to your new location and let them know you are ready for the delivery of your stuff, the move america company gets ahold of the driver and sets up a delivery day and time. The trailer is dropped off @ the new location and you unload it. Once it is all unpacked you call for a pick up on the trailer to let them know all is unloaded and its done :)

This is costing us about $100 less then the budget truck we were going to rent and we are getting more space, out space is 5ft long x 8ft wide x 9ft tall. Plus we dont have to pay for gas, and Vince and I can make the drive to Portland in 1 day since we will be able to switch off driving. Hopefully all will go as smoothly as it shows on paper and our belongings will get to us safely.

The Apartment


Well our property manager, Jen, recieved our intent to lease agreement and our deposit yesterday. She emailed me last night letting me know she recieved it and also attached our lease agreement... I forget how long these freakin things are. So now all me have to do is print the lease, read, and sign it and we will be all set for move in. Our house key along with our mail key will be in a lock box on our door, so when we get there all we have to do is punch in a code and we're set.


Vince and I are so excited! I've had my own place before but this is a first for him. I can't wait to move in and decorate, I'm thinking the bathroom will be done in pinups and martini glasses, what my old roommate and I attempted to do in our last bath room but didn't succeed. I'm thinking I'd like to do the kitchen in a cafe feel, and as for the living room and bedroom I'm not quite sure yet. I know there is an Ikea not too far from us, in NE PDX, so I'm sure I'll spend some time in there before I start school. Ikea typically has cute stuff thats pretty cheap, and works well in apartments.


I will include a picture of the front of the apartment. This is just the front of the complex, the inside is set up pretty much like a typical 1 bedroom apartment. Once we get up there I will post pix of the place all decorated.

Study Abroad with Le Cordon Bleu International

Yes, thas right I can study Adroad and recieve a Grand DiplĂ´me if I choose to study abroad after I graduate WCI, LCB. There are 3 international campuses available to choose from, Paris, London and Ottawa. The 6 courses are 20 weeks long and cost about $7000 USD. I think I will seriously consider the London school after I graduate, it would be such an awesome experience to be able to study abroad. I mean I guess it all depends on where my life takes me while I'm in Portland as well. If I get an amazing externship and get hired on, then I might wait to do it. This is all 14+ months away, so for now its just an idea.

first of all...

So a friend at work suggested I begin a blog, I have thought about it before but just never started anything. Well with changes coming my way I figured it would be a nice thing to start so family and friends can keep up on the happenings in my life while I'm away in Portland, Oregon.

Yes, it's true Vince and I will be moving to Portland July 31st.



For those of you who don't know, I am going to be attending Western Culinary Institute Le Cordon Bleu. I will be getting my dergee in Patisserie and Baking.

Just this past Tuesday we were approved for an apartment. It is a cute 1 bedroom 1 bath in SE Portland, that is only a 30 minute ride on the max to my school! Anyways, check back soon for more updates on a new chapter in my life :)
